Crunchy Bacon Chicken Quesadillas


1 Boneless, Skinless Chicken Breast Half
½ teaspoon Cumin
½ teaspoon Paprika
½ teaspoon Chili Powder
½ teaspoon Garlic Powder
Salt & Pepper to taste
Cooking Spray
4 slices Bacon, chopped
3 Green Onions, sliced
4 ounces Cheddar Cheese, grated
4 ounces Pepper Jack Cheese, grated
4 Flour Tortillas, Mission Medium size


Heat a grill pan. On a plate sprinkle spices on chicken breast, coat with cooking spray and place chicken on grill pan and cook until done. Let the chicken rest on a cutting board. Cut chicken into slices.


Cook bacon in a pan until extra crispy.


Heat a pan to put quesadillas in. In the pan add a flour tortilla - add sprinkle of both cheeses, add about five slices of chicken on one side of the tortilla, add cooked bacon, green onion, and add some cheese on top. Fold the tortilla in half and cook on both sides until brown and the cheese is melted.

Marybeth's Raisin Bran Muffin in a Mug

1/2 cup Raisin Bran Cereal
1/4 cup Milk
2 Tablespoon Flaxseed Meal
2 Tablespoon Almond Meal
1/2 teaspoon baking powder
1/8 teaspoon salt
1 Tablespoon Brown Sugar
1 Egg

In a large mug add raisin bran and milk and microwave for 30 seconds. Stir again and wait a minute and drain the milk from the mug.

Add flaxseed meal, almond meal, baking powder, salt and brown sugar and stir to combine.

.
Stir in the egg.

In the microwave on high cook for 1 1/2 minutes to 2 minutes.  Mine cooks for 1 minute and 40 seconds.

Pop the muffin out of the mug and enjoy.

Orange Pizzazz Smoothie

1 cup Orange Juice
1 cup Greek Vanilla flavored Yogurt
1 tsp Powdered Vanilla
1 tsp Agave Nectar
(optional) 1/2 cup fresh berries

Combine all ingredients in a blender until smooth.

Enjoy!

Recital Day

Today June 9th is our piano recitals. Yes, that is recitals, my two daughters, Jenna and Olivia have one and I have one today. We are making Andes Mint Cookie recipe from sixsistersstuff.com today for the girls recital.
